Homemade Vanilla Ice Cream Recipes For Ice Cream Makers

Ingredients
284ml carton double cream
300ml full fat milk
115g golden caster sugar
1 vanilla pod
3 large free-range egg yolks
have lots of ice cubes at the ready

Method
Put the canister from the machine into the freezer a day before you want to make the ice cream. Next day, pour the cream and milk into a medium heavy-based pan, then tip in half the sugar. Slit the vanilla pod down its length with a small sharp knife and scoop out as many of the tiny black seeds as you can into the cream mixture. Cut the pod into three and drop it into the pan.
Heat the cream and milk over a low heat, stirring occasionally, until it almost boils – you’ll see a few bubbles at the edge. Take off the heat and set aside for 30 minutes so the vanilla can infuse.
Put the egg yolks into a bowl with the rest of the sugar and beat with an electric hand beater for about 2 minutes until the mixture has thickened, is paler in colour and falls in thick ribbons when you lift the beaters. Using a measuring jug, scoop out about 125ml/4fl oz of the cream mixture and beat into the egg yolks to slacken them. Reheat the cream until it just comes to the boil, take off the heat and stir in the egg yolk mixture.
Return the pan to a low heat and cook, stirring all the time with a wooden spoon, for 8-10 minutes, until the custard is thick enough to coat the back of the spoon. Watch that it doesn’t boil – as soon as you see any bubbles about to burst to the surface, it should be thick enough, so take the pan off the heat so the mixture doesn’t curdle.
Pour the custard into a heatproof bowl, then sit it in a bigger bowl one third full of iced water to cool (this takes about 20 minutes). Stir occasionally to stop a skin forming. Put the bowl of custard in the fridge for 3-4 hours, preferably overnight, so it gets really cold.
Get the ice cream machine running, scoop out the vanilla pod pieces, then slowly pour in the cold custard. Leave it to churn for 10-30 minutes (depending on your machine). When it stops, it is probably too soft to eat, so spoon into a plastic container, cover with cling film, then a lid, and freeze for a minimum of 3 hours. (It will keep in the freezer for 3 months but don’t take it out, then refreeze.) Remove from the freezer 15 minutes before serving.
To make it by hand: in step 1, heat the milk, vanilla, and half the sugar without the cream (the custard will be slightly thicker). At the start of step 6, whip the cream so it’s light and floppy, not too stiff, and fold it into the cold custard. Freeze for 3-4 hours, stirring once an hour until almost frozen, then freeze as above.

Have you ever tried reading the list of ingredients on the ice-cream box you buy from the supermarket? If you did, you might have noticed things like guar gum, mono- and diglycerides or artificial flavorings. And a looot of sugar! In case you wondered to what extent are these ingredients natural and what effects they have on your health, here are some tips for you.
Guar gum is used for thickening all types of food products and it’s extracted from the guar plant. Though taken in small amounts it has a neutral effect on your organism, when ingested frequently and in large doses guar gum is associated with several gastrointestinal diseases and even with cancer.
Mono- and diglycerides from fatty acids are additives typically used to prolong the shelf life of food products. Several research studies show that they are associated with diseases such as diabetes or cardiac problems, because they lead to increased cholesterol levels.
As for artificial flavorings, the name says it all. They are mainly made up of chemical ingredients and have been proven to have all kinds of harmful effects on your health, from allergies to hyperactivity.
In case you want to avoid such unhealthy ingredients, but still crave for a deliciously refreshing  ice-cream on a hot summer day, the best solution is to make your own organic ice-cream! It is far easier than you think. Here is our favorite recipe for organic blueberry ice-cream:

Put 2 cups of organic blueberries, a pinch of salt and one spoon of raw sugar in a saucepan and let them boil for a few minutes while stirring frequently. Let the mixture cool a little bit and add 1 spoon of honey (or more, if you prefer your ice-cream really sweet), then blend it with 2 cups of organic cream. Put it in the freezer and let it stay there for a few hours (preferably overnight).

In case if you have an ice-cream maker, things are even easier:

Mix 2 cups of organic cream with 1 cup of organic milk and 1 spoon of honey (or more, if you want). Add 2 cups of blended blueberries and put the whole mixture in the ice-cream maker for about 30 minutes.

And then enjoy your nice cup of organic blueberry ice-cream!

Healthy Chocolate Ice Cream made from Frozen bananas and cocoa powderYou will need:

3 bananas, sliced and frozen
2 Tablespoons cocoa powder
a food processor or blender
Chocolate Ice Cream made from frozen bananas - what a great idea!Directions:

Put your frozen banana slices in a food processor or blender and blend until it starts to get creamy and smooth. If you are using a blender (like me) instead of a food processor, you will have to keep stopping to scrape down the sides with a rubber spatula.
Add in the cocoa powder and continue blending until everything is combined and is the consistency of soft serve ice cream.
Serve immediately or put it in the freezer for up to an hour or two. (Any more than that and it will be a popsicle…which would also be a fun snack.)
Easy & Healthy Chocolate Ice Cream - so delicious!This is so quick and easy, and my daughter always thinks she is getting a special treat when I make it for her.

But, lets say you don’t like chocolate, like me. (I know, I know, crazy!) It is so easy to switch it up by replacing the cocoa powder with other ingredients. Experiment with whatever you have on hand, and see what you like the best.
