While using an electric or hand-cranked ice cream maker will get you to your sweet reward a little easier, it's not a necessity.

Here's how to make do without one:


Combine the ingredients for your ice cream mixture following the recipe. Chill the mixture over an ice bath. Meanwhile, freeze an empty freezer-safe shallow bowl or pan. Stainless steel works well for this.
Place the cold mixture into the cold pan.
Chill for about 20 minutes and check your ice cream. As the edges start to freeze, stir the mixture rapidly with a whisk or spatula to break up the partially frozen ice cream. This will help make it smooth and creamy. You cannot over-beat. Return to the freezer.
Stir ice cream vigorously every 30 minutes until it is firmly frozen. This may be repeated 4 to 5 times until mixture is smooth and creamy. If ice cream becomes too hard, place it into the refrigerator until it becomes soft enough to beat and continue the process.
Ripen the ice cream by storing it in a covered freezer container until ready to serve.

With an Ice Cream Maker

Fill the cylinder of your ice cream maker no more than 2/3 full; freeze according to the manufacturer's directions. If working in batches, refrigerate remaining mixture until ready to freeze. Transfer the finished dessert into a freezer container; cover and freeze until firm. This will take 2-4 hours.

Know the Difference?

Sorbet — contains no dairy; is very light in flavor
Sherbet — contains fruit, but also dairy and is lighter than ice cream
Frozen Yogurt — Contains dairy that has been cultured; resembles soft ice cream
Ice Cream — Must have at least 10% milk fat; may or may not contain eggs
Gelato — Ice cream with a mix of milk and sometimes cream, and eggs; boasts a dense texture.

It’s summertime, which means my mind immediately turns to ice cream, like the Dark Chocolate Chip Orange Olive Oil Ice Cream you see above you. The beautiful thing about ice cream is that is a blank slate for flavor combinations. With the explosion of artisan ice cream shops featuring innovative options, ice cream is no longer limited to just chocolate, vanilla or strawberry. Nowhere has the small batch ice cream shop been more prevalent than San Francisco. Not that it hasn’t always been home to wonderful scoops shops, from Mitchell’s to Swensen’s to Double Rainbow. But in the past five years, shops like Humphry Slocombe, Mr. and Mrs. Miscellaneous, Three Twins and Smitten Ice Cream have opened up all over San Francisco, serving up fantastic flavors with fresh ingredients. Of course, leading the pack (in my mind at least, other San Franciscans swear their own allegiance) is Bi-Rite Creamery, where I’ve been a loyal customer since they opened.

Mix cream and sugar together and freeze it, and ice crystals will form. By agitating the mixture and adding air to increase its volume, ice cream machines create the light, smooth, creamy texture we crave.

Premium ice creams have a low "overrun"--that is, the volume of air added to the mix. That's why the cartons feel so heavy, because the ice cream is very dense. Some lower-grade ice creams that consist of half air, half ice cream have a 100% overrun. Those cartons are lighter.



Egg-Free Ice Creams
Ice cream comes in two basic styles: Custard (or French custard-style) and Philadelphia (also called "New York" or "American").

Unlike custards, Philadelphia-style ice cream contains no egg yolks and does not require cooking. It's based purely on cream and sugar, and is very delicate-tasting, with few ingredients.

Custard Ice Creams
Custard ice cream is, as the name suggests, made from a custard base. Egg yolks or whole eggs are whisked together with hot milk or cream and sugar, and cooked gently until the mixture becomes thick enough to coat the back of a spoon. Egg yolks are natural emulsifiers, and the resulting custard makes an ice cream that is remarkably smooth and rich. Chill the custard for at least one hour before freezing.

Adding Flavor
Starting from a simple base of cream, milk, eggs, and sugar, and then mix in ripe summer fruits, chocolate, and toasted nuts to create your own flavor combos. Other good choices? Vanilla beans, lavender, green tea, fresh peppermint, and candied ginger.

To get the most flavor from a vanilla bean, split it lengthwise with a sharp knife and scrape the seeds into the milk.
After the bean has steeped, remove the pod and rinse in cold water and pat dry.
"Used" vanilla beans are still powerfully aromatic, and can be stored in a canister of plain granulated sugar to make vanilla sugar.
Infuse herbs and spices into the mixture as you heat the milk.
Extracts, liqueurs, and flavoring oils (citrus, peppermint, cinnamon) should be added after the custard has cooled slightly.
Add perfectly ripe fruits and berries to your ice cream base: sprinkle fruit with sugar and crush it with a potato masher before mixing it in. This adds much more flavor than plain chunks of fruit stirred into the mix.
To add nuts, chocolate, crumbled cookies, or whole berries, let the ice cream reach the consistency of soft-serve, and then stir in the garnishes; pack in airtight containers and freeze until firm.
